what are the differences between country, bluegrass and folk music?
Very little...and quite a bit.
Bluegrass music is an offshoot of country music. Its roots are in jazz (as the late Randall Hylton pointed out in his song "The Mother of Bluegrass") as well. It is primarily, although not always, heavily reliant on banjo and fiddle (friends of mine recorded five bluegrass album without a single banjo or fiddle, though). Bluegrass music is, however, always acoustic string instruments -- no electric guitar or drums.
Country music's origins were in the south and Appalachia. It, too, originally had only acoustic instruments (understandable because there was no electricity in some of these regions until the mid-40s). From a scholarly perspective, the instrumentation is what defines the music; and the primary instruments of country are fiddles, steel guitar, guitar, autoharp, and mandolin (which is also in bluegrass; however, it is NOT exclusively a bluegrass instrument -- if you doubt that, listen to Jethro Burns play jazz or classical on the mandolin). Country and bluegrass both can be performed by either individuals or groups.
Folk music -- which used to be used a term used synonymously with country in the 40s and early 50s -- was usually one vocalist with self-accompaniment, and in most cases the content of the song lyrics dealt with recounting an event (think "The Wreck of the Edmund Fitzgerald" by Gordon Lightfoot) or with social issues (look at Woody Guthrie's output). Since the 60s folk has divided into "folk rock" (thanks to Dylan making the album with the Band) and "folk country" (people like John Prine and the late Steve Goodman). As a rule, folk singers tended (note past tense there) to be more interested in what they were saying than the quality of their music and vocals (again, think Dylan -- legendary songwriter, legendarily bad singer).
All three share the common feature of being considered "roots" music -- music that originated on the front porch or the back yard.
